Spring Onion Mozzarella Muffins

Enjoy these delicious muffins any time of the day! Preheat the oven to 400 Fahrenheit (200 Celsius). Sift the flour, baking powder, sugar and baking soda into a large bowl. Add your remaining ingredients and mix until well combined. Spoon your mixture into a lightly oiled muffin pan and bake for 15-20 minutes, or until muffins are lightly browned on the top and well cooked in the middle. Take out and let them cool well…. although I ate one right after I took them out of the oven, and it was DIVINE. ENJOY…..
